Step 1
Combine the
following ingredients:
4 Tbsp Raginmund's
Vintage whole-seed mustard
2 Tbsp white wine
vinegar
2 Tbsp seasoned rice vinegar
3 Tbsp white wine
2
Tbsp olive or canola oil
2 Tbsp pineapple
juice
Mix well, set aside
for 1/2 hour
for flavours to blend.
Step 2
Make 1/2 cup
hollandaise sauce
(use store bought sauce if
you wish)
2-3 egg yolks
2 Tbsp lemon juice
4
Tbsp butter
salt & pepper to
taste
Combine all
ingredients,
cook for 5 minutes, stirring
constantly.
Step 3
Add mustard mix to
hollandaise sauce
Simmer 7-8 minutes.
Add salt & pepper to taste
Spoon over grilled
steaks, garnish
with your favourite herbs. I
like to add
a generous portion of fresh
garlic (never the
powdered stuff, that
should be outlawed).
